To prepare Zucchini Courgette Noodles, you’ll need a spiralizer, a helpful kitchen tool that can transform vegetables into noodle-like shapes. Sautéing them in olive oil and garlic until they’re tender and then mixing them with your favourite sauce, like marinara or pesto, is a simple and delicious option.

Add your zucchini noodles, cook for a few minutes until heated through, and then toss everything in a flavourful sauce, such as soy sauce or teriyaki.

This recipe make a perfect substitute for traditional pasta in many dishes, such as lasagna or spaghetti carbonara, providing a healthier, lighter option. They can also be added to soups and stews, enhancing both the flavour and nutrition.

INGREDIENTS

  • Zucchini or Courgette

  • Cooking fat of your choice

DIRECTIONS

  • Take fresh whole zucchini and either spiralize, peel, or chop thinly.
  • Get a pan to a high heat, add cooking fat, and put the noodles into the pan, we don't want to cook them too much or they will go soggy, we just want to wilt them and make them a little softer.
  • After 6-7 mins add them to whatever else you are serving them with, sauce, stir-fry, pesto, etc., and serve immediately.

NOTES

  • A spiralizer is a useful piece of equipment if you plan on having a lot of these zucchini noodles. If you don't have one, you can use a vegetable peeler to make wide thin noodles or chop them thinly by hand with a knife.
